  • Mixing bowl and whisk

Ingredients
  

Cake:

  • 2 ripe bananas mashed
  • 2 large eggs
  • ½ cup unsweetened applesauce
  • 1 tsp vanilla extract optional
  • 1 tsp baking powder
  • ½ tsp cinnamon optional
  • 1 cup oat flour blend oats in a blender until fine

Frosting:

  • 1 cup full-fat plain Greek yogurt or coconut yogurt for dairy-free
  • 1 tbsp mashed banana or applesauce for light sweetness

Instructions
 

  • Preheat oven to 350°F (175°C). Line or lightly grease the cake pans.
  • In a mixing bowl, mash bananas, then whisk in eggs, applesauce, and vanilla.
  • Add oat flour, baking powder, and cinnamon. Stir until just combined.
  • Divide batter between the two pans and smooth the tops.
  • Bake for 18–22 minutes, or until a toothpick comes out clean.
  • Cool completely before frosting.
  • For frosting, mix yogurt with mashed banana/applesauce. Chill before using if needed for a thicker texture.
  • Stack your cakes and spread frosting in between and on top. Decorate with banana slices or soft fruits if desired.
