Ingredients

  • 1 ripe banana mashed
  • 1/2 cup rolled oats blended into oat flour
  • 1 egg
  • 1/4 cup whole milk or breast milk/formula
  • 1/2 tsp cinnamon optional
  • A pinch of baking powder optional, for fluffier pancakes
  • A tiny bit of coconut oil or butter for greasing the pan

Instructions

  • Blend the Oats: Start by blending the rolled oats in a food processor or blender until they turn into a fine flour. This creates a smoother batter that’s easier for your baby to eat.
  • Mash the Banana: Mash the ripe banana in a bowl until smooth. This will add natural sweetness to the pancakes and a creamy texture.
  • Mix Ingredients Together: In a separate bowl, combine the mashed banana, oat flour, egg, milk, and cinnamon (if using). Mix well until you have a smooth, thick batter. You can also add a pinch of baking powder for fluffier pancakes if you prefer.
  • Heat the Pan: Heat a non-stick pan or griddle over medium-low heat. Once hot, add a little coconut oil or butter to prevent sticking.
  • Cook the Pancakes: Spoon small amounts of the batter into the pan, forming mini pancakes. Cook for about 2 minutes on each side, or until the pancakes are golden brown and cooked through. Be gentle when flipping them, as they are soft and delicate.
  • Serve and Enjoy: Let the pancakes cool down to a safe temperature for your baby, then serve them as finger food. These mini pancakes are perfect for your baby to grab and munch on!
