- 1 cup elbow macaroni or any small pasta
- 1/2 cup cauliflower steamed and pureed
- 1/2 cup butternut squash steamed and pureed
- 1 cup shredded cheese cheddar or a mix of your choice
- 1/4 cup milk or unsweetened almond milk
- 1 tbsp butter
- 1 tsp garlic powder optional
- salt just a pinch, optional
Cook the pasta: Start by cooking your macaroni or small pasta according to package instructions. Drain and set aside.
Prepare the veggies: Steam the cauliflower and butternut squash until soft. Once cooked, blend them into a smooth puree
Make the cheese sauce: In a saucepan, melt the butter over low heat. Add the pureed vegetables, cheese, and milk. Stir until the cheese melts and everything combines into a smooth, creamy sauce.
Combine: Add the cooked pasta to the sauce, stirring to coat it evenly. Let it cook for a couple of minutes to heat everything through. If you prefer a thinner consistency, you can add a little extra milk.
Serve: Once it's all combined, serve the mac and cheese warm. Your little one won’t even notice the hidden veggies!
