Ingredients
  

  • 1/4 cup whole wheat couscous
  • 1/4 cup boiling water
  • 1/4 cup mashed sweet potato cooked
  • 2 tbsp finely grated zucchini steamed or sautĂ©ed
  • 1/2 tsp olive oil or unsalted butter
  • Optional: pinch of mild herbs parsley, oregano

Instructions
 

  • Prep couscous: Place couscous in a heatproof bowl. Pour boiling water over it, cover with a plate, and let it steam for 5 minutes.
  • Fluff & mix: Once soft, fluff the couscous with a fork. Stir in mashed sweet potato, zucchini, and olive oil.
  • Cool & serve: Let it cool to a safe temperature, then serve in baby-friendly portions.
